What makes watermelon taste even better? Putting it with a bit of basil for a tasty watermelon and basil salad!
As the winter months start to fade away and spring approaches, it’s time to start thinking about warmer weather and the foods that go with the season. Watermelon is one of those staple fruits (and vegetable!) for the upcoming summer and finding new ways to enjoy it is always fun.
Here’s a fantastic and simple recipe to combine the sweetness of watermelon to a summer salad.
Watermelon and Basil Salad
- 4 cups watermelon, cubed
- 1 cup spinach
- 6 basil leaves, chopped
- 2 TB pumpkin seeds
- 1 juice of a lime
Mix all ingredients except the lime juice together, leaving the lime last. For an additional source of protein, you can add pieces of chicken or fish.
During the summer months, especially here in Arizona, you definitely want to make sure you’re hydrated by drinking water. The great thing about watermelon is that they are 92% water! Not only that, but it’s very low in calories and supplies you with several other healthier nutrients, like vitamins C, A, B1, B5, B6, and potassium.
Kicking up the nutrition, is the spinach and basil, which are both low in calories, and are good sources in iron and calcium. Lastly, pumpkin seeds are also high in fiber, iron, and magnesium, as well as antioxidants which can help reduce inflammation and protects against many diseases.
