In our 4th recipe video, join Taisiya as she creates a fresh, delicious recipe using parsley grown right in our Pure Greens Container Farms! Here’s what you’ll need to create this recipe at home:

  • 1 cup of water
  • 1/2 cup of quinoa
  • 3/4 cups of celery
  • 1/2 cup of apricots
  • 2 apples
  • 3 tablespoons of lemon juice
  • 1 tablespoon of honey
  • 1/4 teaspoon salt and pepper
  • 1/4 cup of pumpkin seed kernels
  • Feta cheese

You’ll start by boiling the Quinoa for 20 minutes in a medium pot. Next, you’ll chop up your celery, apricots, apples, fresh parsley and lemons.

After you chop your produce, you’ll want to combine your lemon juice, olive oil, honey and salt& pepper in a bowl. Make sure you’re checking on the Quinoa if you’re cooking and chopping at the same time.

Finally, you’ll combine all of your ingredients in a large bowl, toss and serve! This recipe makes about 4 servings and is great for family or friendly gatherings!
